How to Make Baked Ricotta?

Baked Ricotta is a great Bariatric meal and in ready to enjoy in only 20 minutes.

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor combine the ricotta cheese, parmesan cheese, and seasonings. Pulse until well blended.
  3. Spray the bottom of a small ramekin with non-stick cooking spray.
  4. Add a layer of marinara sauce to the bottom of the ramekin dish.
  5. Pour the ricotta mixture into the single serve ramekin and spread evenly.
  6. Layer one more spoon of marinara sauce on top of the ricotta mixture.
  7. Bake for 20 minutes in the oven.
  8. Let it cool for a few minutes before serving.

  • You can add blended meat such as cooked chicken or turkey to this recipe for added protein.

Can I Make Instant Pot Baked Ricotta?

Yes, you can make ricotta bake in the Instant Pot. You’ll need a trivet and ramekins to do so.
Simply prepare the baked ricotta following the instructions above.

Next place a cup of water into the bottom of the Instant Pot and place a trivet inside.

Cover the ramekins with tin foil and place on the trivet. Pressure cook for 5 minutes on high pressure.

The Instant Pot version won’t have a golden brown crust but it tastes just as good and saves some time!

Using Ramekins After Bariatric Surgery

After Gastric bypass surgery you’re tummy will be super small. I have found having small plates and ramekins super useful as it helped me to manage my portion sizes better. You can get budget friendly white ramekins online or if you want something fancy, you might want to invest in some colorful ramekins.

I’d stick with 4 ounce ramekins or 6 ounce ramekins as this is a realistic amount you would want to serve for one bariatric meal. You can also fit up to four 6 ounce ramekins into your 6 quart Instant Pot.
